Mark Hix details an Elizabethan favourite for using Bramley apples

If you like your desserts light as air this one's for you. Fluffy meringue is used as a topping for a sweetened apple compote then baked until golden. Serve for a special family gathering or a dinner party for friends

I am posting this for the ZWT3 (Scandinavia). I got this recipe from a old cookbook, which my mother bought me for Christmas years ago, and I love this book. I have not tried it yet, but it looks very easy and interesting. Finnish apple snow is tradionally served in a glass bowl with a pinch of cinnamon sprinkled on the top.

1 Preheat oven to 150ºC. Lightly spray a shallow 5-cup-capacity baking dish with oil. Combine apples and custard in dish. 2 Use an electric beater to beat egg whites and salt until soft peaks ....
