I first heard this recipe on the @the_car_pool podcast during their ‘ditch the drive-thru’ segment, and it sounded so good I had to try it! Ingredients: Gorgonzola gnocchi Garlic herb chicken sausage Mini tomatoes Spinach Shallot Instructions: Slice the shallot, add to a pan with olive oil, and cook for a minute. Add in 2 sliced chicken sausages and cook until browned (about 7-8 minutes), then add in 1/2 cup of sliced tomatoes. Season with salt, pepper and garlic powder and stir. Add in the Gorgonzola gnocchi and cook for another 5 minutes. Add in 1-2 handfuls of spinach and cook 2 minutes longer. I have to share this incredible TikTok recipe that I just made last night using Trader Joe's frozen spinach and artichoke dip, cherry tomatoes, garlic, and olive oil. It is a live changer! The original recipe, of course, calls for Feta cheese as the main component. However, a newer variation sprouted up introducing the Trader Joe's spinach and artichoke dip as the lead flavor profile and I cannot tell you how delicious and easy it is to make.
