Preparation

  1. Step 1

    Mash an apple slice in the base of a glass with a muddler. Add ingredients other than the cinnamon; shake and strain into a highball glass filled with crushed ice. Garnish with a whole apple slice dusted with freshly grated cinnamon.

Tip
  • To make simple syrup, combine ½ cup sugar and ½ cup water in a small saucepan and cook over medium heat, stirring occasionally, until sugar dissolves. Let cool, then transfer to a very clean jar or bottle. Cover and keep refrigerated until ready to use.

Cooking Notes

Shake with ice. Alcohol needs the surface contact that shaking/stirring brings to dilute its intensity. Shaking with ice in this case will also pulverize that apple more, releasing more flavor.

Tried it with both silver & spiced rum - the darker rum enhanced the “spice” notes and made for a prettier (and more flavorful) drink.

We made this cocktail this weekend, substituting bourbon for the rum. It was, quite simply, fantastic. Happy Autumnal Equinox!

This has become one of my favorite drinks. Great as it is but I’ve started making it without the cinnamon and with Mezcal instead of Rum. Results in a crisp, refreshing, and great drink in the summer too.

this is good! i subbed rye whiskey for rum and added an egg white + additional dash or two of black walnut bitters. magical fall cocktail.

Brown sugar syrup instead of simple syrup! That's what I tried tonight and it was tasty. To make it I put about 1/3 cup brown sugar in a bowl and poured in enough boiling water into it to make it dissolve into a syrupy consistency. Would reduce lemon juice by half if trying this again.

For the life of me, I don’t understand why this is made with white rum, and not bourbon, or at least a spiced rum. It’s fine as written, but definitely doesn’t evoke fall in the northeast. My guests agreed. We switched to bourbon and everyone loved it, some threw in a splash of apple cider, but at that point it’s a completely different drink.

I was tempted to make alterations, like using a brown sugar simple syrup, but I followed "the rules" for the first try. I really enjoyed this as is and look forward to making another one soon. I got more juice out of the muddled apples than I expected, so there was plenty of apple flavor that was balanced well with the lemon, rum, sweetness, and even the little bits of cinnamon that made their way into the cocktail from the garnish.

This is amazing! I'm usually just a wine/beer gal, but this cocktail has me walking on clouds. I used 1 oz white rum + 1 oz dark rum - loved the combo. I added a broken up cinnamon stick to the simple syrup that I made, and then skipped the freshly grated cinnamon garnish. Also added a splash of sparking water (used lemonata Peggegrino, but plain would work) to dilute just a bit. Forgot the bitters and it was still fabulous, but I'll be sure to include that next time.

Used part jack daniels apple and part dark spiced rum, and shook with the cinnamon stick inside the shaker. Make sure you’re using a good apple for muddling, mine wasn’t the best (hence including jack apple). Happy fall!

Replaced the rum with bourbon used black walnut bitters and absolutely loved it. Think this would go great with a homemade cinnamon simple syrup, too, as opposed to the original simple syrup.

This was great. Agave syrup works just as well as simple syrup. Made with both. We adjusted sweetener depending on how tart the apple was. Also made the recipe with cognac (amazing) and Laird’s Applejack (very good also, more like apple cider). The rum is refreshing and well-balanced, and the darker spirits are richer but very tasty variations. Didn’t bother with fresh grated cinnamon after the first one, and I don’t think the taste suffered. Admittedly, the fresh grated was nice presentation.

Oh, YES. Yum!! I used an ounce of light rum, and an ounce of an aged Jamaican rum to add a little more depth of flavor, and it’s superb!! Perfect cocktail to compliment Thanksgiving dinner.

This was really good. I used fresh pressed apple juice and lemon from the juicer. Substituted raw honey for the simple syrup. No bitters.

Would using Apple cider work instead of muddling an apple?

Very good! Used 3 equator skinny slices of yellow apples from neighbor. Added about 3/4tsp of sugar since I didn't have simple syrup. Muddle that sugar with the apples. It comes out really goopy and hard to strain through the cocktail shaker. Next time I might add some water...or use real simple syrup to get the right liquid consistency. Lemon = half a small/medium. No bitters needed. Add a dash of ground cinnamon to the serving glass, then add ice, then drink, then dash of cinnamon again

I've been using agave syrup as simple syrup, and it works quite well!

Made these for again for Thanksgiving. My tips: Make a double recipe, using all ingredients per recipe. Muddle the apples in the cocktail shaker with half the rum to prevent the apples from getting stuck in a mass at the bottom. Once muddled, add everything, shake. Put the ice in your glass of choice, dash cinnamon on the ice, and pour drink over it. Then add a dash of angostura aromatic bitters on top, it REALLY completes the cocktail.
