Preparation

  1. Step 1

    In a cocktail shaker, combine sugar with 2 tablespoons hot tap water and shake until sugar dissolves. Add tamarind and lemon; shake well. Pour into ice-filled highball glasses. Top with club soda and add two dashes of bitters to each glass.

  2. Step 2

    Hold each orange strip under a match or lighter for 10 seconds until it just begins to color. Twist strips and drop one into each drink; serve.

Cooking Notes

I would think one would hold the orange strips over, rather than under the match or lighter flame.

Double or triple the limes, half the sugar, 1.5 oz mezcal

We split the base between two highball glasses and that seems fine. I wouldn’t bother shaking the sugar and water. I use a Boston shaker and it failed to make a seal without any ice and resulted in a sticky mess. If I made this again i would use a cocktail mixing glass and would imagine that would work just as well and be less sticky. I also didn’t notice any flavor from the charred orange peel, although my oranges are a little on the older side so that could be why.
