Preparation

  1. Step 1

    Preheat broiler of toaster-oven or oven broiler.

  2. Step 2

    Sprinkle pepper over chops and broil on one side for about 7 or 8 minutes on each side.

  3. Step 3

    Remove fresh thyme leaves from stems and mix with cheese. .

  4. Step 4

    Turn chops; top with cheese and thyme and continue broiling until chops have reached desired degree of doneness.

Cooking Notes

Followed this easy recipe exactly except before broiling the chops I put some olive oil and sea salt along with the pepper on the lamb. The flavor combination of the goat cheese with thyme and the lamb chops was phenomenal in my opinion. It was the first time I've made lamb chops. I am looking forward to making again.
