Cooking Notes

Coconut milk is great! Once you open the can, freeze the leftover in an ice cube tray. Save cubes in a zip top plastic bag in the freezer. Use cubes in smoothees with fruits or other recipes calling for coconut milk such as a winter squash curry bisque.

I made this and found the peanut sauce especially delicious. I added a couple dashes of Penzey's Sate seasoning to the sauce the chicken is microwaved in, but didn't feel that the chicken has much flavor with just that sauce. I think perhaps a touch of cornstarch or other thickener might make that sauce adhere more, and I'd make it again with more Sate powder for more flavor. Make extra peanut sauce to add to vegetables and maybe some Asian noodles for a true Thai flavor.

That's about right, maybe a tiny bit high. The nutritional info is for the entire recipe.

1/4 cup peanut butter: 400 cal
2 tbsp sesame oil: 240
3 tbs total honey: 180
Chicken: maybe 150?
soy sauce and sesame seeds:30-40
So that's about 1000.

I made it… the satay sauce was dark and not liquid. I used dark soy sauce, maybe that was the reason, and maybe I did not use enough milk. It tasted ok, just didn’t look right.

Microwaved chicken? Seriously?

I teaspoon of vinegar really helps the sauce.

microwave cooked chicken? granted it is only for 15 seconds but this didn't seem like much of a recipe. I just grilled chicken satay skewers, basting with satay sauce lightly during the grilling and then after to stick to the seeds. The peanut sauce tasted better than I thought it looked, but I only used a small portion of it to save calories. I would make less next time.

Does not look like the picture. In my view, the recipe calls for too much honey. I used the sauce on poached chicken breast. Very tasty, but not satay ---- more like Asian chicken salad.

This sauce is really good. It made a great vegetarian meal- pan-seared tofu, wilted greens and noodles. So easy. Either milk or coconut milk works just fine.

Why milk? Why not coconut milk?

For most of us, this is simply a question of practicality. Everyone has milk in the fridge, but do you really want to open up a container of coconut milk just for a single teaspoon?

For people who are kosher, or for other milk free diets, what can be used as substitute for the milk

1162 calories per serving?! Can this be close to right?

I would suggest there's no way under the sun. Much closer to less than half of that number.
