Ingredients
- ½pound dried apricots
- 2½cups dry white wine
- ½cup sugar
- 1teaspoon cardamom seeds
- 1cup mascarpone cheese at room temperature
Preparation
- Step 1
Simmer apricots in the wine and sugar with cardamom seeds until soft (about 20 minutes).
- Step 2
Pour apricots into a serving dish and let them sit at room temperature until ready to be eaten. Serve the apricots with mascarpone cheese and, if you like, sugar cookies.

Lovely for a winter fruit dish, with ricotta or heavy cream. The second time I made this I used cardamom pods; fine, but not as special as using just seeds.
I serve this with the mascarpone piped into the room temp reconstituted Turkish apricots, sprinkled with chopped pistachios. I've also made variations using ingredients like Grand Marnier, vanilla bean, almonds. Super easy and popular party food for me.
Consider adding some toasted slivered almonds atop the mascarpone?
