  • Ā½cup freshly grated Parmesan cheese
  • Ā¼cup flour
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • 1teaspoon paprika
  • 1egg, lightly beaten
  • 1tablespoon milk
  • Ā¼cup melted butter
  • Ā¼cup sliced almonds

Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Wipe the catfish dry.

  3. Step 3

    Blend together the cheese, flour, salt, pepper and paprika.

  4. Step 4

    Combine the egg and milk in a flat dish.

  5. Step 5

    Dip the fillets in the egg mixture and then coat with the cheese mixture. Arrange the fillets in one layer in a baking dish and pour the butter over all. Sprinkle with the almonds. Place in the oven and bake 20 minutes.

Absolutely love this recipe. I skip butter and drizzle fish fillets with avocado oil instead. Makes for perfect and easy fish sandwiches: toasted sourdough, mayo, avocado, tomato and fish. Fast and tasty dinner!

So good. Farmraised Catfish is a sweet, meaty freshwater fish. Be sure you buy American raised, like Simmons Farms. So much better than tilapia, which I would never eat.

Smoked paprika was a nice touch too!

I used regular parmesan cheese out of a jar, and threw in some regular bread crumbs in addition to the flour, and it came out beautifully. I eliminated the almonds.

Great recipe. We did it with basa (because my wife bought basa by mistake and I wanted to do something with it).

I think that almonds were a bit redundant, though. I tried some of the fish with olive oil instead of butter, and it had more of a modern taste.
