Ingredients
- 46-ounce salmon steaks
- Salt and freshly ground black pepper
- 4tablespoons unsalted butter
- 1tablespoon fresh lemon juice
- Minced parsley, chervil, dill, chives or scallions for garnish, optional
Preparation
- Step 1
Prepare a gas or charcoal grill or preheat the broiler; adjust the rack so that it is 4 to 6 inches from the heat source. Sprinkle the salmon with salt and pepper. Grill or broil until the first side is browned, about 5 minutes; turn and cook the other side for 2 or 3 minutes, until the fish is done to your liking.
- Step 2
While the fish is cooking, put the butter in a small saucepan and turn the heat to medium. Cook, swirling the pan occasionally, until the butter stops foaming and begins to brown. Remove from the heat immediately and season lightly with salt and pepper; keep warm if necessary.
- Step 3
To serve, stir the lemon juice into the butter and drizzle a little of it over each piece of fish. Garnish if you like.

Made this the other night broiled 4 salmon steaks simple quick meal with some broccoli agree FH cyclist more salt and lemon.
I had a long, physically taxing week and my day had just ended with a wonderful mountain bike ride. I was looking for something easy and this popped up when I did a search. I didn’t have a grill so I sautéed the salmon and left the skin on, like the other Notee, since this was so simple and it added a lot of flavor. Suggested changes: more salt and more lemon. I did use minced parsley and it added a lot. I had it with roasted Brussels Sprouts. A lovely, delicious, filling meal.
Delicious and easy recipe! Don't have charcoal/gas gril, so broiled it in the oven on a rack just as instructed, skin side top first and then flipped it to the other side. Served it with plenty of sautéd greens. truly awesome!
