Put oil in a large deep skillet or casserole that can later be covered; turn heat to medium-high. Brown pork on all sides, turning as necessary, and adjusting heat so the meat browns but does not burn. This will take about 20 minutes. Season it with a little salt and pepper.
When the pork is just about browned, add shallots, chilies and ginger; brown a bit, then add about 2 cups coconut milk and the nam pla. Bring to boil, cover, and adjust heat for a steady simmer. Cook, turning occasionally, for at least 90 minutes, or until the pork is tender; add additional coconut milk if mixture dries out.
When the pork is tender, remove to a platter. Stir lime juice into sauce; taste, and adjust seasoning, adding more chili, nam pla or lime juice as necessary. Carve meat, and serve it with sauce.
Nice and simple. Added lemongrass and thought it was awesome.
Delicious! [With edits] Definitely cube the pork before browning (and I used a trick from a carnitas recipe -- add a little milk). If you render the fatty pieces first, no additional oil is required. 2T of fish sauce, not one. One can of coconut milk is plenty -- and if you add a big pile of greens, so much the better. (And you can simmer partially covered instead of covered.)
I didn’t have shallots - I used quartered onions and garlic. I had bottled ginger but know the fresh would have been better. This was very tasty and easy. The lime added a very nice flavor and I had some cilantro which I sprinkled on when serving and I’d likely add it again.
I am a lazy cook, so I left the fresh ginger in chunks and the jalapenos in strips instead of dicing. When it was time for the sauce to be, I strained out all the chunks and strips and it was lovely!
Like a lot of Bittman's recipes, this one tastes much more complex than it is. I did make this with pantry ingredients due to a weather-related last-minute menu change. I used dried ground ginger, red pepper flakes, a bit of lime zest, and 2 pounds of pork shoulder sliced about 1/2 inch thick. One can of coconut milk and the juice of half a lime was plenty. I cooked it covered on the stovetop about 35 minutes and another 10-15 in a 350 oven to reduce the sauce a bit. Delicious!
I decided to add fresh green beans and shitake mushrooms (because I had a crave) and it was quite delish.
Cooked in my instant pot. Everyone loves it!
Made with pork, added lemongrass. Curry would also be awesome. cooked in oven at 300 for several hours, pulled the meat and served in corn tortillas with mango salsa. Will be making this again, it was amazing.

Made this with cubed pork - browned the meet in batches first. Worked really well.
Did this change your cooking time for the meat? If so how... Thanks
Yummy, but next time smash the peppers or add more-- it needed more spice and maybe tiny amount of sugar... Brown the meat better.
I doubled the broth and included potatoes and other root vegetables.
[2.4.19] Threw in 5 large country style 'ribs' without cutting. Used 3 cans of coconut milk and a mixture of dried poblano, canned chiles, and fresh poblano. Had 7-8 shallots, cut in half, and 3 whole garlic cloves. Needs the lime juice, but liberally applied to rice it's quite nice.
Used garlic rather than shallots. Added some noodles near the end, (rice would work) then some baby bok choy. Extremely quick and easy to do; used boneless pork ribs rather than a whole roast, and it cooked up in 20 minutes or so. Ditto chicken, no doubt. Plan to teach this to my granddaughter, who loves Asian food and wants to cook it. Very, very delicious broth.
As cans come in many sizes, it would be very helpful to include the number of oz. per can in the ingredients list. Thank you!
Very easy, a keeper. Browning the meat will take you longer than anything else. Used skinless boneless chicken thighs instead of pork, so the dish cooked quickly--20 minutes. Chx poaches in the c milk. Whisk c liquid and cream together before adding to pot. Sauce is rich with chx flavor. Shallots fall apart--use all. Added a total of 2 1/2 tablespoons of the Fish Sauce for deeper umami--a must. Go easy on lime juice till you taste effect. Served with jasmine rice. Guests loved it. Comfort food!
