  • 1cup sweet butter, slightly softened
  • 1cup sugar
  • 116-ounce box light-brown sugar
  • 1cup plus 1 tablespoon peanut butter
  • 2eggs
  • 2teaspoons vanilla extract

  • 1tablespoon baking powder
  • 1cup semisweet chocolate chips

Preparation

  1. Step 1

    Preheat oven to 350 degrees. Whip together the butter and sugars. Add the peanut butter and whip to combine completely. Continue beating while adding eggs and vanilla. In another bowl, combine the flour and baking powder. Use a fork to blend the flour mixture into the peanut-butter mixture. When fully combined, stir in the chips.

  2. Step 2

    Make balls about of an inch in diameter. Place on a nonstick baking sheet and with a fork press each ball down to create a crosshatch design. Bake for 10 minutes. Remove from the sheet immediately and cool on a rack.

Cooking Notes

I love peanut butter cookies AND chocolate chip cookies. These cookies seem to lack an identity, in that they need more peanut butter, and the chocolate chips should be left out. Also, be careful with the cooking time, temperature and position of the rack in the oven.

I chilled this dough for an hour before baking, and instead of the crosshatch design, I rolled them in sanding sugar and topped with a portion of a bite-sized Heath bar in the center. They were delicious.

I also felt that these cookies were overly bland and sweet (from someone who likes sweet). The peanut butter flavor is not strong and it seemed to me some salt might help

This is now the only peanut butter cookie recipe I use as my husband loves them (we just call them "Fred's"). I always add more peanut butter.
