Birdie G 'World Famous' Rose Petal Sold - At Last! - As Whole Pie

SANTA MONICA, CA — Birdie G's "World Famous" Rose Petal Pie, a dessert lightheartedly named by chefs long before its now-deserved "fame," can be purchased for the first time ever as a whole pie, not just by the slice, at the Santa Monica restaurant.

The signature dessert, featured on the restaurant's menu since Day 1 with the "World Famous" moniker, is a modern take on retro, jiggly-gelatin "stained-glass pies." At the Westside eatery, it's a melding of rose and raspberry mousse with rose, strawberry and hibiscus gelatin pieces, layered onto a pretzel crust and sprinkled with dried raspberry powder, candied rose petals and fresh berries.

Credit for the "World Famous" Rose Petal Pie creation goes to Chef Jeremy Fox and Pastry Chef Deanie Hickox, with the “World Famous” part added as a lark. But after the restaurant and the dessert caught the eye of a New York Times food critic, the pie was launched into the dining spotlight.

"At Birdie G’s, this fat, enchanting rose-petal pie was a real beast of a slice, wobbling exuberantly, but it wasn’t nearly as sugary, or as voluptuously floral, as it first appeared," Tejal Rao wrote in 2019 in The New York Times. "It was architecturally sound, built on a salty, roughly textured crust. And it had a restrained, mellow flavor, carefully tempered with acidity."

"Bouncy fragments of deep pink rose-petal, strawberry and hibiscus jellies are suspended in an opaque raspberry and rose mousse, the jellies shining like stained glass. The raspberry crumble glows a neon pink. The crystallized rose petals sparkle."
