Meatless Monday: Sesame Noodles for Two

Tired of having leftovers when cooking for two? This week's Meatless Monday features Sesame Noodles perfectly sized for a hungry, noodle loving couple.

Nutty soba noodles, flavorful broccoli and mushrooms, and edamame come together for a delicious, easy weekday meal. The vegetables get cooked in vegetable base to infuse additional flavor and seasoning. My husband couldn't stop eating the steamed broccoli - trust me, that's a big deal! It's all topped off with a creamy sesame tahini sauce that has a touch of sriracha for heat. It's fairly easy to throw together and so satisfying to dig into!

INGREDIENTS

  • 4 ounces soba noodles
  • 4 cups broccoli florets
  • 4 ounces shiitake mushrooms, sliced (1/4 inch)
  • 1/2 sweet onion, thinly sliced
  • 1/2 cup edamame, cooked
  • 2 teaspoons fresh minced ginger
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil, divided
  • 2 tablespoons water
  • 2 teaspoons vegetable base
  • 1/4 cup tahini
  • 2 teaspoons soy sauce
  • 1 teaspoon sriracha
  • 1 teaspoon honey
  • Sesame seeds, for topping (optional)

DIRECTIONS

Whisk together 2 tablespoons of water and 2 teaspoons of vegetable base. Set aside

Cook the soba noodles according to the directions, drain and return to the pot

Heat 1 tablespoon sesame oil in a large skillet over medium low heat. When warm, add the ginger, garlic and onions. Cook until the onions soften and the ginger and garlic are fragrant (about 3 - 4 minutes)

Add the broccoli and mushrooms and stir to combine

Add the vegetable broth, quickly stir to distribute, raise the heat to medium and cover. Steam for 4 minutes - the broccoli should be tender crisp

While the vegetables are cooking, make the sauce by whisking together the tahini, soy sauce, sriracha, honey and 1 tablespoon of sesame oil. Set aside

Add the vegetables and any remaining broth to the pot with the noodles. Add in the edamame and as much sauce as desired (I use all of it). If the sauce is too thick, add warm water in small increments

Add the noodles to bowls and top with sesame seeds
