Celebrity Pastry Chef Opens SALT Patisserie In Newton

Chef Thiago Silva's first Boston-area venture is now open in Picadilly Square, offering French Pastry with Brazilian influences.

NEWTON, MA — Chef Thiago Silva, whose A-list clientele includes Derek Jeter, John Legend, Iris Apfel and many others, has opened his first Boston-area venture SALT Patisserie in Newton Centre’s Picadilly Square.

SALT Patisserie features Chef Silva’s signature modern pastries, which are reflective of both hi French training and Brazilian roots, in addition to all day baked goods, muffins, cookies, macarons, assorted desserts, and La Colombe Coffee.

Hailed for his innovative designs, Chef Thiago Silva’s creations have served as jaw-dropping centerpieces on the tables of stars like Sofia Vergara, Miranda Kerr, and Carmelo Anthony. He won Food Network’s first all-baking Chopped Competition in 2015, has competed and won Dessert Games on Food Network, was a finalist on Best Baker in America, successfully Beat Bobby Flay, and has served as a judge on both Sugar Rush on Netflix and Chopped Sweets.

After serving as Executive Pastry Chef at New York City’s EMM Group (now Catch Hospitality) for several years, Chef Silva moved to Boston for a position as Director of Chocolate with food innovation lab, CHEW, in 2016, before starting his new venture. Most recently in 2021, Silva was a contestant on Netflix original series, School of Chocolate.

“I’m grateful to have spent many years in high end restaurants, catering to celebrities and athletes in New York City, and then to have continued to hone my skills at CHEW Innovation here in Boston,” Silva said in a statement. “But I’ve always dreamt of running a patisserie that brings together delicious pastry and a true sense of community. Opening my first Boston-area bakery in the town where I am raising my family feels like a natural extension of myself. I am so proud to open the doors to SALT and show our neighbors what we’ve been working on for the past year.”

Highlights from SALT’s opening menu include:

  • Romeo and Juliette Croissant: A play on the classic Brazilian pastry with white cheese and guava paste inside flaky croissant dough
  • Pao de Queijo: Gluten-free cheese bread like the mini Portuguese gougeres, but in large-format sandwichbread
  • Assorted housemade Bon Bons, including Passion Fruit Strawberry Milk Chocolate, Peanut Butter and Jelly, Raspberry Rose, and Gianduja Crunch• Cookies and Cream Eclair: Made with black cocoa choux and vanilla crème chiboust
  • Quatro Leites Cake: Silva’s riff on the classic tres leches with the addition of housemade dulce de lecheas the rich cake’s fourth milk
  • Tropical Baba au Rum: A traditional French dessert with a tropical twist; made with exotic fruit compote, coconut whipped cream, passion lime baba, milk chocolate dip, and caramel poached pineapple
  • Assorted housemade croissants, including sweet (almond, chocolate and more) and savory (everything spiced, rye)
  • Designed by Jeff Osborne of Boston’s Hark + Osborne Interior Design (Aquitaine, La Motta, G. Spa and more)

SALT Patisserie will operate with limited hours upon opening: Seven days a week from 8 a.m. to 5 p.m. In the months to come, SALT will also debut a patio, a full chocolate program, and more.
