New Pizza Restaurant Coming To Sudbury

SUDBURY, MA — A new pizzeria is planning to open soon in Sudbury, promising "over-the-top" pizzas — like a pie with macaroni and cheese on top.

Fire Dough Kitchen is planning to open in the plaza at 730 Boston Post Road, and will replace Petros Pizzeria. Petros closed in early June after five years in Sudbury.

Founder Jason Carter describes Fire Dough Pizza as a "quick-serve" restaurant aimed at young professionals. Aside from pizza, the restaurant will serve flatbread sandwiches, salad bowls and desert.

"All menu items will feature over the top ingredients like the “Mac Daddy” pizza piled high with creamy mac and cheese, pulled pork and BBQ sauce," reads a description of the restaurant's business plan. "Or the 'Aloha' flatbread sandwich with chicken covered in pulled pork, Hawaiian 'Huli Huli' sauce, grilled pineapple and fried chives."

The Sudbury Board of Selectmen was set to approve Fire Dough Pizza's victualler license at the July 14 meeting. Carter is planning to have the restaurant open sometime before the end of July.
