The local Hudson-based ice cream chain, which also has a shop in Cambridge, has been planning the Sudbury location since August. The owners waited to solidify a distribution deal with Whole Foods, which is also located in Meadow Walk, before opening in Sudbury.

New City uses a special process to create its ice cream, cooling Mapleline Farm cream to negative 300 degrees using liquid nitrogen.

"Using the super-cold liquid nitrogen creates a smaller ice crystal which gives it the smooth New City texture we look for," the company says.

Some styles that will be available in Sudbury include traditional vanilla, chocolate, and strawberry, plus vegan ice cream, and specialties like salted cookie, fennel and baklava.
