Fridley 49er Pie Baking, Key Ingredients: The Judge

The final word.

Although I grew up on classics like Hamburger Helper, Hungry Jack instant mashed potatoes and Kraft Macaroni and Cheese, I’ve turned into a bit of a food snob. I prepare meals like poached salmon in a champagne sauce with herbs, or linguine with asparagus in a lemon zest studded cream. And when I dine out, I like it to include wasabi and a crisp white wine.

I’m discriminating about my food, and while I certainly go to places like Perkins and Applebee’s, they aren’t my favorite. Several months ago my family and I went to eat at our local Baker’s Square (Blaine, Northtown) for breakfast, and I was pleasantly surprised. The interior had been completely revamped looking modern and inviting. I had the California frittata, it was light and clean tasting, with fresh vegetables, perfectly cooked eggs and wasn’t overly salted. I have since gone back to find a consistently good experience.

It pleased me greatly to see their food elevated (almost, but not quite) to the same level as their pie. I think most of us can agree; no one does pie like Baker’s Square. When $1,000 is at stake for a local Pie Baking Contest, I can’t think of a better authority to be judge.

For the third year in a row, Baker’s Square (Blaine, Northown) will be judging the Fridley 49er Pie Baking Contest. Chris Lodin, store manager there, leads the pie judging team. Chris reminds you of your favorite Uncle, full of laughs and quick witted, he is the kind of guy you can see yourself hanging out with at a backyard BBQ, a cold beer in hand. I ask him a few questions about the upcoming contest.

Where did you grow up? I am from Brooklyn Center, but now live in Ramsey.

How long have you been at Baker’s Square? I have been with Bakers Square for over 16 years. It’s hard to believe I’ve been here that long…

What has the reaction been from your staff to judge the Pie Baking Contest? My staff has been talking about the contest a lot. Honestly, it was hard to choose my fellow judges as everyone wanted to go. I remember last year after the contest our guests were coming in asking who won, who won...? Everyone gets so excited! It’s a fun time and we’re really happy to be part of this community event.

Even though Baker’s Square is an established All-American brand, the economy has been tough in the last decade. What is the biggest challenge you face about the restaurant business? Our biggest challenge we face today is keeping prices affordable for our guests. Our guests have been loyal to us through all the ups and downs, and they deserve for us to stay committed to keeping prices down and quality high.

What does “community” mean to you? To me, community means a place for all to come together for GREAT FOOD AND UNBELIEVABLE PIE. We believe it us our job to take care of our guests by delivering the best dining experience so that everyone leaves with a sense of well-being and satisfaction with our great value. We want them convinced that we are the best choice for daily dinning out. Every time. I want to say a big “thank you” to our loyal guests and friends in our great community, we appreciate you.

The restaurant industry is a demanding one. When you’re not there, what do you like to do for fun? I’m a family man, married to my beautiful wife of 14 years with two daughters (14 & 11) that keep us busy. I love the outdoors, and pretty much spend any free time I have with my family.

What is your favorite kind of pie? My favorite pie? Boy oh boy... I don’t know; Banana Cream, French Silk or Apple is always a winner; Especially when it first comes out of our oven.

When it comes to a judging style, are you a ‘Paula’, or a ‘Simon’? Easy. I’m a ‘Chris’.

All amateur bakers who live or work in Fridley, Coon Rapids, Columbia Heights or Blaine can enter in any of three categories: fruit, cream and original/creative. Judging is done on a point system, the most points overall will win the Grand Prize. Highest points in each category will win as well.
