CHATHAM, NJ — In the middle of the pandemic in the heart of Chatham, a flower or “fleur” - as its said in French - bloomed, in the form of the Fleur De Sel Pâtisserie and Bistro.

Fleur De Sel on 265 Main St. is one of several new additions to Chatham’s downtown that Borough Mayor Thaddeus J. Kobylarz recently recognized as being a part of Main Street’s renaissance, along with Sonny’s Indian Kitchen, Asahda’s Soul Food, Mexican Spice, Namkeen Hot Chicken and Scoops The Chatham Creamery.

“Main Street in Chatham is going through something of a renaissance,” Kobylarz said at a recent council meeting. “Each of these eateries have played a huge part in the creation of a more flourishing downtown scene.”

Fleur De Sel, according to its website, prides itself in its “little taste of France in Morris County,” with both sweet and savory items, freshly prepared each day.

“It has always been a dream of mine to open my own business,” Patricia Etel Khawand, Fleur De Sel’s owner explained on the bakery and eatery’s website. “After spending time working at leading locations and hotels around the world, it was time to create something a bit closer to home and one in which would provide a better work life balance to spend time with my family.”

“Fleur De Sel is the answer to all that I could look for and it’s been a true pleasure getting to know our customers and serving the community thus far,” Etel Khawand also wrote.

Cakes, eclairs, cookies, macarons and tarts are some of the sweet offerings. Croissants, soups, quiches, sandwiches and salads are among the savory.

Croissants and tarts themselves have their own varieties that stretch beyond the everyday. One could opt for a sweet or savory croissant, for example, either with chocolate, almond or cheese. Tarts offered can be sweet and chocolaty or topped with meringue or fruit.

Fleur De Sel also features a coffee and tea bar with handcrafted iced and hot drinks. Among thirst-quenchers in the warmer temperatures, are iced teas and coffees, nitro brew and sparkling mocktails. Beverages can be accented with flavors, such as herbals like lavender, elderflower and rose; the more traditional and comforting hazelnut and vanilla; and juicy berry flavors like cassis and raspberry.
