New Upscale Indian Restaurant To Open In Hillsborough

HILLSBOROUGH, NJ — After working in the pharmaceutical industry for the past 15 years, Hillsborough local Parthiv Buch is changing career paths to follow his passion for food.

Buch is opening Mishta, an upscale Indian restaurant in his hometown at 220 Triangle Road.

"Cooking has always been my passion since my childhood," said Buch.

Buch grew up watching his mother and grandmother in the kitchen.

"Inspired by their passion and traditional recipes, he's now bringing those same raw, authentic flavors to New Jersey. Each dish is a tribute to his roots and the love of home-cooked meals," according to mishta.dine.

Encouraged to follow his passion by his wife, Buch went to India to be professionally trained by a chef one-on-one. Once he came home he began doing private events across the world including the U.S., England, and London.

Now he is taking the next step to open his first restaurant in his hometown.

"It's a great town," said Buch. "I think we have a good diversity. And I just thought that there's a need for an upscale Indian restaurant."

Buch noted that when his family wanted to go out to eat for a nice Indian dining experience, they either had to go to New York City or Princeton.

"I'm like, well, who wants to drive three, four hours to go to New York City when you can have something in your hometown, right? Something nice, where you can have a nice dining experience," said Buch.

Buch found the location in New Center Village Square where he is hoping to open Mishta sometime in September.

What makes Mishta stand out is the concept is Farm to Table. Buch has partnered up with some of the local farms in Hillsborough.

"We're going to be using fresh produce to make our food. I'm also partnered up with some of the local meat farms where the meat is going to be, actually, you know, organic, grass fed," said Buch. "The focus is on making sure that we eat clean so that we can feel clean and feel good."

Everything will be made in-house and his spices are being flown in from India.

"Just to give that authentic taste and flavor," said Buch.
