Scotch Plains Local Serves Up Bowl For Your Soul

SCOTCH PLAINS, NJ — With a passion for food, Michelene Lambros of Scotch Plains is serving up tasty bowls from her healthy food truck “Soul Bowls” to feed the soul and tummies of locals in Somerset and Union counties.

“I think I’ve always loved food and I grew up around it,” Lambros told Patch. “My sister and I are both vegan and wanted to offer a convinent way to eat healthy on the go.”

Lambros has worked in the food industry since she was 13 years old. She eventually went to Montclair University where she got a degree in nutrition and then went on to work at a hospital.

"But I didn’t believe in what they were doing,” Lambros said. “ I wanted to make a change for the better and that’s what drove me to want to create this.”

That’s where Soul Bowls came in.

“Soul Bowls started from a desire to branch out and try something different, something that truly set our hearts free,” Lambros said.

Her food truck focuses on offering fresh, healthy and organic ingredients. Everything is 100 percent organic: Acai, organic pitaya, raw soulnola, raw agave, and local produce.

“We want to bring food full circle from picked to purchased. This is our reason for being a truck that is 100 percent vegan. All of our ingredients are simply plants, aka gifts from mother earth,” Lambros said.

She started the food truck last year and began serving locals at the Scotch Plains Farmer’s Market. Now Lambros is expanding her reach to serve at Bridgewater’s Farmer’s Market, which runs every Sunday from June to October at the Somerset County Library System's Bridgewater Branch at 1 Vogt Drive.

Soul Bowls can also be found at 2679 Plainfield Ave., in Scotch Plains from Tuesday to Friday and she also does events on the weekends.
