From Carteret's Latin Fest to the Middlesex County Fair, here are some fun local things to do this weekend:

MIDDLESEX COUNTY, NJ — First of all, don't forget the Middlesex County Fair starts Monday, Aug. 2 and runs through Sunday, Aug. 8!

After taking a hiatus last year due to the pandemic, the Middlesex County Fair is back this year at the county fairgrounds on Cranbury Road in East Brunswick. Fireworks are scheduled for opening night on Monday. Here's all the info: Middlesex County Fair 2021: Here's What To Expect

Saturday, July 31:

Carteret: Latin Fest. The very popular festival will be held at Carteret's Waterfront Park and Veterans Pier (100 Middlesex Avenue) this Saturday, July 31 from 4 p.m. onwards.

The festival will feature live music by international recording superstar Amarfis, whose hits include "El Pollo" and "Spanish Girl," as well as Swing Combo, Santo Ferreira y Su Bachata Elegante and DJ sets from the Latin Mix Masters DJs and MC Willie Will.

There will also be fireworks, Hispanic food, vendors, rides for kids, a beer garden and all the best salsa, merengue, bachata, cumbia and musica tipica.

Princeton: Outdoor summer lawn concerts at Princeton University (not Middlesex County, but right down the road!): Hear the Princeton Symphonic Brass orchestra perform classic film and Broadway hits. Sunday, Aug. 1:

South Amboy: South Amboy Independence Engine & Hose Co.'s first annual car show. 10 a.m. - 4 p.m. Sunday at the South Amboy train station. Edison: 6 p.m. Come to the Plays in the Park stage at Roosevelt Park in Edison for the Mark Heter Band, "New to You Old Favorites." The free outdoor concert begins at 6 p.m.; bring your own lawn chair.
