Hudson Valley's Romance With 'La Crém' Will End On Valentine's Day

We will bid adieu to La Crémaillère as its historic farmhouse is renovated, but the chef will stay at a new concept named "Le Poisson."

BEDFORD, NY — This year, Valentine's might be your last chance to say farewell to an old friend, but while the moment might be bittersweet, don't cry, because there are other "Poisson" in the the sea.

Michelin Guide-reviewed La Crémaillère, the French restaurant located inside a 1750s farmhouse in Bedford, announced that they will be closing for renovations and will be re-opening with the same chef, Thomas Burke, as a new restaurant, Le Poisson. The owners describe Le Poisson as a "seafood forward, fine dining French restaurant" that will "feature only the finest quality seafood, a great wine list, and our classic French service that you have come to know & love."

The fine dining restaurant, better known simply as "La Crém" by foodies, has been a Hudson Valley institution for generations. The storied restaurant has had a couple of ownership changes since it was established in 1948. In recent years, the restaurant has earned international acclaim.

In 2023, Michelin announced La Crémaillère was among just 14 new restaurants added to the Michelin Guide New York. The Michelin critics may miss "La Crém" as much as the regulars, praising the "straight from France" flavors of signature dishes.
