Ribbon Cutting Held For Latest Burgerology In Massapequa

"We're waiting for September; then we're going to probably do one or two more on Long Island, hopefully," owner Eddie Galatoulas said.

MASSAPEQUA, NY — Burgerology officially opened its sixth location on Thursday. A giant scissor was used to cut the symbolic ribbon at the Merrick Road restaurant in Massapequa.

It's a family business for Eddie Galatoulas, who owns Burgerology with his wife, son and daughter.

Massapequa is special for Galatoulas, who started the location as the New York Burger Bar, which predated their first Burgerology in Rockville Centre.

"As super successful as the Burger Bar was, we just said it made more sense to just add it onto the family [business]," he said. "It's easier to manage. It's easier to control."

Before transitioning to a Burgerology in April, New York Burger Bar had an 8 1/2-year run.

While they had a built-in burger base, Burgerology allowed them to seek out a wider appeal of customers with younger families, thanks to the renowned shakes and desserts. They also target fathers with big screens showing sports.

"The moms can have a nice glass of wine. It's just a combo of everything," Galatoulas said.

Before finishing a question about the potential for expansion of the business, he interrupted, "Absolutely."

"We're waiting for September; then we're going to probably do one or two more on Long Island, hopefully," he said. "Then we're just going to hit the 95 corridor all the way to Florida. That's been the game plan."

His confidence comes as customers are, literally, eating up the burgers. One of the menu favorites is where people construct their own burger by picking the type of patty, toppings, sauce and even bun.

"One day, I don't know when, I might not be around. There's going to be 100 of these all over the place," Galatoulas said.
