Savory Saturdays brings you the new restaurant in the Hotel Nyack. Pretzel-dusted calamari, anyone?

(Angela Gaul for FARM)

NYACK, NY — As part of our intermittent series on the unique eateries of the Hudson Valley, Patch reached out to a revamped restaurant in the trendy Hotel Nyack. We talked with FARM's general manager, Matt Tobin, and we just have to say before we start that we are utterly intrigued by the pretzel-dusted calamari.

FARM’s culinary concept evokes the local experience of gathering together in a comfortable atmosphere to enjoy great food and drinks, Tobin told Patch.

As for the former, the massive ceiling-to-floor windows offer diners beautiful views of the outside patio while inside, guests are surrounded by colorful artwork created by artists from the tri-state area.

As for the latter, many of the foods and drinks are sourced from local purveyors in Rockland County and the tri-state area that are known for fresh produce, sustainably sourced seafood, and delectable bread and pastries, Tobin said. "Whether you are looking for a romantic dinner or brunch with friends, every meal period offers something for the most savvy foodies."

Chef Rene Xelo Sosa has extensive experience in high-end steakhouses— for example, he is a veteran of the iconic Willett House in Port Chester. Sosa loves to try new items, use flavors and techniques from his home country of Mexico, and incorporate local ingredients, Tobin said.

The eclectic menu runs the gamut from breakfast sandwiches to creative bar bites. Speaking of which, the bar features beers from local craft breweries.

Dinner, now, that's a feast for the senses. Let's start with that pretzel-dusted calamari, shall we? It's served with spicy house aioli and lemon tartare sauce.

Then I'll have a steak and you can have the salmon — as long as you give me a bite.

Just hope you've saved room for this scrumptious dessert, Banoffee Pie — banana cream pie with a toffee-graham cracker crust, plus chocolate and caramel drizzle.
