Utensils Not Properly Sanitized, Inadequate Cooling: Vienna Restaurant Inspections

A few restaurant inspections in July found violations like food not cooled after six hours and employees not properly sanitizing utensils.

VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.

Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

  • Unwrapped or uncovered food in the following location where the food is subject to contamination: GUACAMOLE, PICO DE GALLO, AND DICED TOMATOES WERE NOT COVERED WHILE EXPOSED TO CONDENSATION IN THE REFRIGERATOR.

  • Violations:
  • The following cooked time/temperature control for safety food(s) are not being adequately cooled from 135F to 70F within two hours and to 41F within a total of six hours. Grilled/sautéed onions were placed in a large tub to cool at room temperature, and were observed to be 115F after 6 hours and 50 minutes of cooling.
  • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: sliced tomatoes, chipotle sauces, ranch dressing, Red Thai sauce, and other sauces made on premises; blue cheese, shredded cheese, social sauce.
  • Employees are not aware of or are not practicing proper methods to rapidly cool time/temperature control for safety food (TCS food). Cooked food was left at room temperature to cool and was noted to be 115F after 6hrs and 50 minutes of cooling.
  • The following methods used for cooling were not adequate to facilitate proper cooling: Food placed in large container and left to cool at room temperature over 6 hours.
  • Working containers of poisonous and toxic materials are not properly labeled with a common name.
  • Observed that the air conditioning system in the kitchen is not operating properly and is impacting the refrigeration units on the cook-line not to be able to maintain foods at 41F and lower.
  • Back door to the kitchen is kept open for ventilation and opening is not protected by a screen or other effective means.
  • The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: The refrigerated sandwich prep table on the cookline.

Violations:

  • The following cooked time/temperature control for safety food(s) are not being adequately cooled from 135F to 70F within two hours and to 41F within a total of six hours. Halal rice found to be 44F and 45F after 6 hours.
  • Employees are not properly sanitizing cleaned utensils at the 3-compartment before they are air dried or reused. They are not following the three steps.
  • The food temperature measuring device was found out of calibration in the range of use. The food thermometer was found without active batteries and as a result, could not be operated.
  • The following methods used for cooling were not adequate to facilitate proper cooling: large amount of rice placed in small deep containers and tightly sealed before cooling down to 41F.
  • Intake and exhaust air ducts are not being cleaned at a frequency necessary to prevent contamination by dust, dirt, and other materials. The grease filters under the hood system were noted to have excess grease buildup and grease dripping.
