This wire cheese cutter really works extremely well. The reason is the wire is very tight, there is no slack or bending at all when in use. As a result, cheese can be cut thick or thin accurately and quickly by tilting the hand up for thin or leaving level for thicker. Another outstanding feature is the ease of replacing a broken wire using a screw. I have not had to do this and do not expect to for a long time, hopefully. The cutter comes with extra wires also, a real bonus.

I've Used Wire Cheese Cutters For Decades

I've been using wire cheese Cutters for 50 years and thus is the best one I've ever used. The wire is slightly thicker guage so it doesn't stretch and deflect as much, so I expect it to last a very long time.

The cutter feels solid and substantial in the hand.

It handles pepperjack, Colby, and similar density cheeses with ease. It's easy to adjust the thickness of the cut by changing the angle of the cutter. You will probably find it easier to use these types of wire cutters works best when you push it through a cut, rather than pulling it through a cut. That way the wire enters the cheese before the roller touches the cheese, and the wire also exits the cheese block before the roller. This also allows you to place your fingers or hand at the wire exit point and you'll always have a clean exit without removing a jagged chunk at the exit point.

I'm recommending this cutter to everyone.

I like it. One controls the thickness of the cheese by tilting the cutter. I think it needs a cheese cutting board with a stop to support the end of a block of cheese. It tends to break off the entire end of the block of cheese when there is no support. The thicker wire puts more force on the block of cheese, and this causes the end of the block of cheese to break off if the end is not supported.
