Greetings, Thank you for joining us for our WAR on Diabetes! Today, we will learn about AVOCADOS! Here's some nutritional information and a delicious guacamole recipe. Nutritional Information on Avocados https://lnkd.in/gSFGC-3k The best guacamole you'll ever eat! This delicious and easy guacamole recipe is made with a mix of creamy and chunky avocado, bites of heat from jalapeño, and fresh flavor from cilantro and lime juice. SERVES 6 Ingredients 3 ripe avocados 1/2 lime, juiced (about 1 tablespoon fresh lime juice) 3/4 cup grape tomatoes, quartered 1/3 cup diced red or white onion 1 jalapeno, finely diced (or two if you like it realty spicy!) 1/2 cup chopped cilantro ¼ teaspoon toasted chili powder ( lightly toasted in the oven) 1/4 teaspoon salt, plus more to taste Optional: 2 garlic cloves, finely minced Freshly ground black pepper Instructions Wash, peel, and mash the avocados in a medium bowl, but not so much that it becomes overly creamy. You want a mixture of a chunky and creamy consistency. Next, add in lime juice, grape tomatoes, diced onion, jalapeno, cilantro , chili powder, and salt and pepper. Give it a stir. Taste and adjust the seasonings as necessary (add more salt if you like it a little bit saltier!). Garnish with extra sliced grape tomatoes, cilantro, and jalapenos. Enjoy it with fresh vegetables, whole wheat pita, fruit, etc. Healthy Foods To Eat With Guacamole Celery sticks, carrots, bell pepper (mini or regular size), radishes, broccoli florets, cauliflower, jicama, cucumbers, and even sliced fruit are all great for dipping. There are so many great substitutes for dairy milk nowadays. All offer great vitamin and mineral content, and importantly, taste! As it’s baking season, why not try our vegan grapefruit drizzle cake made with soya milk? Save the recipe for later and share your showstopper bakes. #NEFFpassion Ingredients: • 50ml vegetable oil • 200g caster sugar • Zest of one ruby grapefruit • 210g plain flour • 1½ tsp bicarbonate of soda • Pinch of salt • 220ml soya milk • Juice of half a ruby grapefruit Step 1 Preheat oven to CircoTherm® 170°C. Line a loaf tin with a loaf liner. Step 2 Mix vegetable oil and sugar together in large bowl. Add grapefruit zest, flour, bicarbonate of soda, salt and milk. Beat together with a wooden spoon. Stir in grapefruit juice. Step 3 Spoon into prepared loaf tin and place in oven. Adjust setting to low steam and bake for 30-35 minutes until lightly golden and cooked through (test this by inserting a cocktail stick into the centre – if it’s cooked, it should come out clean). Step 4 Remove from oven. Mix together granulated sugar and 2 tbsp of grapefruit juice. Poke holes in hot cake and spoon over sugar mixture. Leave to cool in tin. This first topping adds extra zesty flavour and moisture to cake. Step 5 Once cool, remove from tin and remove the loaf liner. Step 6 Place icing sugar in a bowl and add half the remaining grapefruit juice. Stir with whisk until combined. Add more grapefruit juice as required until you have a thick drizzle. Step 7 Spoon icing mixture over cake. Blot grapefruit slices on kitchen roll to remove excess juice, then arrange on top in a line. Step 8 Cut into slices and serve. Enjoy!
