Cynthia's Tempered Fried Potatoes with Turmeric
Sri Lanka has many different kilangus, or potatoey root vegetables. This quick dish, made by tempering hot spices, curry leaves and onion in oil and adding soft potatoes so they crisp up in the pan, is great made with new potatoes that you don’t need to peel. I roast the potatoes a bit crispier than is strictly traditional. If you can get Maldive fish or bonito, it makes a big difference.

Bryant's Sweet Corn Relish
Bryant Terry’s sweet corn relish is summer in a jar. This recipe is inspired by the relish his maternal grandmother would make with corn bought at local farm stands. His version preserves corn, peppers and tomatoes in a sweet and tangy brine of rice wine vinegar, sugar and spices like mustard seeds, cumin, peppercorns and turmeric.
