You’ll need: 4 oz 96/4 beef 85g frozen tater tots (I use Ore-Ida mini tots) Taco Seasoning to taste 1/4 cup Rotel 1/4 cup (28g) reduced fat Mexican cheese 2 tbsp lite sour cream *optional: taco toppings of choice How to make: Brown beef over medium heat, drain off grease, then add taco seasoning and a splash of water. Simmer on low heat for 2-3 minutes, then stir in rotel. Add taco mixture to an oven safe dish. (I use 22oz baking dishes) then top with shredded cheese, then frozen tots. Bake on 350 for 20-25 minutes. Tots will be golden brown once ready. Top with lettuce, sour cream, jalapeños, and any other taco toppings you like.
