The breakfast tacos at Ruby Slipper included three grilled flour tortillas filled with a scrambled eggs, pico de gallo, pepper jack, chipotle sour cream and avocado, served with a side of breakfast potatoes.

The Ruby Slipper, a popular New Orleans-based breakfast and brunch location that also has a presence in Baton Rouge, will open a location in Lafayette.

The restaurant was granted a building permit from Lafayette Consolidated Government for the space at 4701 Ambassador Caffery Parkway, Building D, in what had initially been a space for a Denny’s at the Ambassador Town Center.

The project is valued at just under $1 million, records show.

The Ruby Slipper was started by New Orleans couple Jennifer and Erich Wieshaupt in 2008 in a former corner store in their Mid-City neighborhood, which was then still rebuilding from Hurricane Katrina, reports indicate. It now has multiple locations in New Orleans and locations in Baton Rouge and the Florida and Alabama Gulf Coast region.

Denny’s signed a deal last summer to move into the spot near the Jet Coffee and Jersey Mike’s Subs but backed out of the deal, property owner Phil Devey said.
