Paige’s Kitchen: Marinated Cheese

GAINESVILLE, Fla. (WCJB) - This recipe is not only tasty but the perfect gift to take to your next outing. The jar of cheese is beautiful and adds star quality to any charcuterie tray. Enjoy!

Ingredients

  • 8 to 10 ounces creamy cheese such as Havarti, feta, gouda, mozzarella
  • 1/2 teaspoon dried red pepper flakes
  • 2 small dried red chili peppers
  • 2 (1 inch) slices of fresh lemon peel (no white part, just the outer peel)
  • 1 teaspoon black or multi-colored peppercorns
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme, each cut in half
  • 2 smashed cloves garlic
  • 1/2 teaspoon flaky sea salt
  • 1 cup good quality extra virgin olive oil
  • Wide Mouth Glass Jar

Instructions

  1. Cut cheese into 1/2-inch cubes.
  2. Pack half of aromatics into bottom of clean, 16 ounce wide-mouthed glass jar.
  3. Pack half of cheese loosely on top of that.
  4. Then add the remaining aromatics.
  5. Add remaining cheese to fill jar.
  6. Pour olive oil over the top.
  7. Cover all of the cheese and additions, to avoid any oxygen getting to the ingredients (which would increase the chance of spoiling early).
  8. Tightly close jar with cover and turn jar over a few times. Then leave it on the counter for 3-4 hours to infuse and refrigerate overnight before eating, up to 10 days.
  9. The olive oil will solidify in the refrigerator, so set out an hour or so before serving at room temperature.
