Paige’s Kitchen: Grilled Pound Cake

GAINESVILLE, Fla. (WCJB) - Grilled pound cake is a terrific dessert. If you prefer to make your own pound cake and freeze it that is wonderful.

But there are great bakeries in our area that offer yummy pound cakes that are a perfect substitute. Just make sure the cake is dense and cut the slices larger than normal. I find one inch is a great size. It’s also a good idea to use a serrated knife to keep the cake from falling apart.

Make sure the grill is clean and oiled.

Experiment with your favorite toppings because there is no way you can go wrong when you start with cake. Enjoy!

Ingredients

  • Pound cake sliced ( Paige used a pound cake from Fresh Market)
  • Melted butter
  • 2 pints of washed fresh berries (sliced strawberries, whole blueberries, or blackberries)
  • 8 oz Creme Fraiche
  • Lemon juice and zest of lemon to taste
  • Honey (Paige used local Straughn Honey)
  • 1 TBSP powdered sugar
  • 2 TBSP white granulated sugar
  • Fresh mint for garnish
  • Grand Marnier (optional)

Directions

  1. Mix together creme fraiche, lemon juice, zest and powdered sugar. Place back in the fridge.
  2. Berries may be left plain. If you want to soak the fruit in Grand Marnier sprinkle berries with white sugar and 1/4 cup of liquor. Set aside
  3. Preheat a grill or grill pan to medium-low. Brush the pound cake slices with melted butter. Grill until the cake is toasted, about 2 minutes on each side.
  4. Place cake on a plate. Add creme fraiche topping and berries and drizzle with honey and garnish with mint.
