GAINESVILLE, Fla. (WCJB) - It’s time to put Florida’s fabulous peaches to work in your kitchen. Whether you use this fruit sauce on pancakes, waffles, yogurt or beside grilled chops get ready for the compliments.

Paige used frozen peaches for this recipe, but fresh peaches are fabulous. She didn’t need to use cornstarch as a thickening agent for the frozen peaches. But if you use fresh juicy peaches the cornstarch will help thicken the sauce.

Blueberries are a great substitute for peaches. Enjoy!

Ingredients

  • 1 (10- to 16-ounce) bag frozen berries or peaches
  • 2 to 3 tablespoons fresh local honey (Paige used Straughn’s)
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon kosher salt
  • 1 teaspoon cornstarch (if needed)

Directions

  1. Pour frozen fruit into a medium-sized saucepan. Add honey—2 tablespoons for a 10-ounce bag or 3 tablespoons for a 16-ounce bag—along with vanilla , cinnamon and salt.
  2. Place the pot over medium-high heat and cook, using a large fork to mash until fruit is thawed, bubbling, and beginning to break down, 5 to 10 minutes.
  3. Whisk in cornstarch (if needed) and boil for 1 minute, continuing to whisk. The sauce should be glossy and slightly thickened. Serve, or pour into storage containers.
  4. Store in the fridge for up to 1 week or in the freezer for up to 3 months.
