GAINESVILLE, Fla. (WCJB) - Stuffed shrimp with feta is a real crowd pleaser. The recipe can be prepared a day in advance and baked just before serving. It is ideal for serving as an appetizer or as part of a buffet spread. For a main course option, pair the dish with a fresh salad. Enjoy!

Ingredients

  • 1 lb (approximately 16) unpeeled shrimp
  • 1/2 cup panko breadcrumbs
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons diced roasted red peppers
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon lemon zest
  • 1 large egg yolk, beaten
  • 7 tablespoons melted butter, divided
  • 1/3 cup dry white wine
  • Cocktail sauce

Directions

  1. Preheat the oven to 350°F
  2. Coat a shallow baking dish with cooking spray.
  3. Peel the shrimp, ensuring the tails remain intact.
  4. With a sharp knife, make a incision along each shrimp, ensuring not to cut through completely. Rinse the shrimp and gently flatten them on a clean surface.
  5. In a mixing bowl, combine the panko breadcrumbs, crumbled feta cheese, chopped parsley, diced roasted red peppers, lemon juice, minced garlic, lemon zest, beaten egg yolk, and 4 tablespoons of melted butter. Mix thoroughly.
  6. Spoon approximately 1 tablespoon of the panko mixture onto each butterflied shrimp, shaping it as needed.
  7. Arrange the stuffed shrimp in the prepared baking dish.
  8. Pour the dry white wine and the remaining 3 tablespoons of melted butter around the shrimp in the baking dish.
  9. Bake until the shrimp turn pink and are firm to the touch, approximately 15 minutes.
  10. Transfer the stuffed shrimp to serving plates and drizzle with the pan juices and cocktail sauce.
