Hands down the BEST prime rib dinner my husband and I have had in Whatcom County !! Every bite was better than the last. No gristle and really tender. Cooked perfectly Seared Ahi with pickled cucumber salad appetizer was spot on. Caesar Salad was fresh and tasty. Cocktails were tasty and nicely poured. Great job chefs and waiters staff !! Thank you for making our date night special

Not even worth 1/2 star. Terrible service, rude waitstaff and I can make better "German" food at home. It's a joke of a restaurant. Save your money.

Ooooook. Is this a joke??? I literally don’t even care about this review. YOU are rude, you’re not specific on anything, you’re making blanket generalizations, and I seriously doubt this is even a legitimate review. And you have left 4 reviews in the past two hours which completely ruins your credibility in my book. And you’re reviewing on Yelp….which tells me everything I need to know.

Finally got to try Herb. Went there for my husband's birthday because we heard so much about their steak and he wanted steak for his birthday. First, the decor is definitely eccentric. Antlers hanging off the ceiling and all with that ole fashion vibe. Not sure if that is the "German" decor but I was definitely loving it.
We had made reservation as stated on the website, but I don't think you need to as there were not a lot of diners this night. The only minus star I gave was because we brought our kids with us and there was really not much of an option for them to eat. My husband ordered the ribeye and he said it was cooked perfectly. I ordered the Oscar and for it being my first time, I really liked it. Kids were not a fan of their "Texas toast"? and my kid did not like the mash potatoes that she ordered nor the bbq wings. Otherwise, us adults were happy with our meal.
It is a bit of a drive to dine here so more than anything we don't anticipate to drive back. The food was good, but not worth the drive or the cost to make it back. If you want a good steak, I would suggest you go to the Steak House in the Silver Reef casino. I really like this place and would come more often if it was not 30 min away. The food is great and huge portions are the norm. If you are on a tighter budget eat in the bar they even let kids sit there to eat during the day. If you are heading to Mt. Baker make the detour on the way back and grab dinner here.

I'm not exactly sure where to start - this place blew my mind.
Friends told us we should go, and I made the executive decision to trek to Everson. Steak and schnitzel - ok, interesting, but we'll go try it? They raved and they're pretty discerning about food, so away we went. I can't believe I doubted them because service was friendly and casual, the food was seriously good, and portions were hefty.
We had a steak and schnitzel (duh) and ordered a side of spaetzle because I had no idea what it was. My steak was literally perfect - cooked rare, but grilled and charred on the outside. The flavor was insane. The green beans with almonds and bacon were so good, I had to stop myself from eating them to save room for the steak. I love me some potatoes, too, and there were enough of them to take home for a breakfast or two.
The schnitzel was the best I've ever had in my life - it was so tender you could cut it with a fork, but the breading was super crispy. It's hard to strike that balance! The red cabbage on the side offered a lovely contrast in taste and texture, and the béchamel sauce was so so good. The ONLY thing I would have said is that the spaetzle came out just as that - plain - and was pretty dry and could have used a sauce.
While it's not the cheapest place, you get what you pay for, and I'd gladly pay for this again. Bring cash to avoid a fee, and go with a large appetite. You won't be sorry.Helpful 3Thanks 0Love this 2Oh no 0 - Oct 17, 2023
My last trip to Washington I had the pleasure of dining here. It has such a unique, but nostalgic vibe and you get some of the best German food to boot.
The restaurant and tavern are kind of dimly lit. Decor and feel are like an old, homey lodge. You get the feeling it has been around for decades and has not changed a bit, which is a good thing in this case. Almost all of the tables were full when we were in there on a Saturday night. Always a good sign! Not too loud, but also not austerely serious. You could hear laughter and the hostess playing happy birthday on a set of hand bells (the kind you ring by shaking) for a few lucky patrons. Relaxing and fun. After you eat all of the delicious food, you then understand that everyone just wants to be in their food coma among friends.
We had a good sampling of the menu at our table. Some schnitzels, the spatzle, and one steak. The salads and French onion soup coming out first with Texas toast in the bread baskets to start. Everything served on old plates that reminded me of holiday dinners at my Grandma's house. Not a drop or crumb was wasted. Then the entrees came out. Huge portions of amazing food. The best German food I have had (with the disclaimer that I have never had this food in Germany). There was a pile of spatzle with chicken covered in white wine sauce. Everything on my platter down to the red cabbage was just fantastic. Friends gave me bites of their schnitzel, which was gigantic but perfectly cooked. Not dried out and tough. We tried our hardest to eat what we could, but we all had boxes to take home. Not a bad thing as It was even better the second night!

Okay Yelpers. If you are in the north sound get your butts up to Herb Niemann's . It's like a north woods lodge in there. They have plenty of space and a very cool back room they might use for a large party. You will not be disappointed. We went back for a second visit because I wanted a Porterhouse steak. Herb's is 18 ounces of beefy goodness. I had mine medium rare (the only way in my world) and it was fantastic. Just the right amount of char on both sides. It was easy to cut and definitely easy to eat. They put their own blend of seasoning on it (they also sell it) which boosts the flavor of the beef into the stratosphere. I decided not to buy it so it will be special when I go back. I had a double order of German potatoes which was probably over a pound by themselves. I couldn't finish them but you can bet your beef eating rear ends I finished the steak. Once again the staff was great. I think our server was the sister of the server we had last time. She was friendly and very efficient. We wanted for nothing and they are all easy to look at as well. Mrs Billy D had her Chicken Cordon Bleu which was also stellar. Next time we will ride up and take up residence in their bar and try the bar menu. I'm sure it's just as great. I'm sure glad we discovered Herb's. I'll definitely be jumping around the menu at Herb's. Everything looks great! Give Herb's a go!

Feb 2, 2024Previous reviewOkay.... We were way late to the party in discovering this gem in Everson, WA. First off Everson is about 55 miles from my door but it's worth the drive trust me. Herb Niemann's is an established restaurant that has been around a long time. The inside is mostly all wood and stone accents. Representative of days gone by. Kind of has a north woods lodge feel to it. They have a full bar on the premises that features a separate bar menu with smaller portions and lower prices. It also has its own separate entrance right on the corner. It's all dark wood and dim lighting. Perfect.
The menu concentrates on German fare and steaks. If you want a steak you can get a Porterhouse here. You don't see that cut in most places. I went with the Jaeger Schnitzel. It came with a mushroom gravy poured over the cutlets and spaetzle. It was excellent. There was also some excellent weinkraut that was just the right amount of tart. Mrs Billy D had the Schnitzel Cordon Bleu. Her plate had German fried potatoes and I have to say they were very good. Portion size was on the large side and coupled with our appetizer and soup and salad we took home containers. I need to mention the French Onion Soup. I love that soup and this one was one of the better ones I have had. Mrs. Billy D had a Berry Punch cocktail. It was basically a Huckleberry Long Island Iced Tea. She had a pair of them (Woo-Hoo! )
I have to mention the wait staff. I felt like an extra in a Russ Meyer movie. All the employees I saw were female and stunningly attractive. They were all smiles and they were doing a great job. I enjoyed banter with our server. She said she was the sister of the owner but I did not catch her name. They all looked like they were doing a good job. Shout out to the gent manning the grill. He was putting in some work back there grilling the steaks. Way to knock 'em out my man. You are appreciated.
We really enjoyed our visit and considering the amount of food we had the prices were very reasonable. We will be returning. We like riding our motorcycles up that way so this will be a preferred stop minus the Berry Punch cocktails of course. so amazing. Genuinely, service sucks. It's unfortunate to go in there and feel like a burden and treated like an inconvenience. I've tried to give this particular bartender the benefit of the doubt a few times especially working in the industry.. however I get treated with the same service consistently now and it's pretty sad. We're big on supporting local, and it takes a lot to not. Fall 2023 went there and was extremely disappointing. French Onion soup was so salty couldn't eat it. Steak was mediocre. Very disappointed.

This review is 6 months later? That’s….interesting. Did you let your server know you had a problem? Did you ask to speak with a manager? We would have happily replaced your steak or refunded your money. Every cow is different, we occasionally get a lack later side and we are happy to hear if it’s not up to par so we can grind the rest into hamburger.
Sadly, 6 months later there is little I can do to improve your experience.
