Simon is truly a master knifesharpener. His process uses traditional Japanese whetstones with nano-fine grit. He even showed me samurai blade that was surgical-level sharp! You can hear the passion he has for his craft when he describes the process. I am certain my knives are sharper than when they were new!

I found Simon through a local community group and he did not disappoint!! My Shun knife had a broken tip and a few chips on the blade. I dropped it off and it was fixed within a few hours. There are a times in your life when you realize that you're in the presence of someone who's a master at what he does. More times then not, they do the thing and do it with passion. Simon is one such fellow. I found him thru Yelp, he was the first of a few to answer my question, "do you sharpen S-Blades for food processors. I had two that needed sharpening really bad. One was a dull as listening to the nightly news with my parents as a kid. And since he did S-blades why not bring him a few of my Japanese knives for S&G's. The dull S-blade is so sharp it's like watching George Carlin or Dave Chappell tearing a heckler apart just for fun. He learned his craft in Japan, and what he's done to my blades, I can see sushi chef's bringing their prized knives to him to work on. Prices are fair. Service is great which is in short supply these days. Highly recommended.

Simon did a great job on my nakiri, santoku, and German chef knife (Wustof chef knife - with bolster). They came back to me within the hour and were extremely sharp. Would definitely recommend Simon for sharpening. His prices are reasonable and he's very responsive!
