    Ramen butcher had a veggie ramen. I think, may have to double check

    True...but everyone deserves a good bowl of noodles.  I just realized,  although vegetable broths are available,  the noodles are not vegan since they're made with eggs. I think your only option is Chau Veggie for vegan pho

    Sanpachi on Broadway has a great veggie broth it tastes vegan maybe if you ask nice they won't bother throwing in that slice  of Surimi
