I've never been able to really figure out what that category means. But to me, it always suggests tiny portions arranged in towers on large plates, for a dinner that I hope someone else is paying for... or perhaps "celebrity chef" fare.

I agree with Reena, but think its a general term blanketing the North American region for the tendency of pulling from different continents to liven up traditional North America food :)
