Ingredients
- 2cups coarsely grated or julienned carrots
- 1Scotch bonnet or habanero pepper, finely diced
- 1serrano pepper, thinly sliced
- ½white onion, chopped (about 1 cup)
- 2teaspoons kosher salt
- 1teaspoon Vietnamese fish sauce, such as Red Boat
- ½cup brown sugar
- ½cup cider vinegar
- ½cup rice vinegar
Preparation
- Step 1
In a large metal bowl, combine the carrots, peppers, onion, salt and fish sauce. Toss well to combine.
- Step 2
Place the sugar and vinegars in a small pot and bring to a boil over high heat, stirring to dissolve. Once the mixture is at a rapid boil, pour it over the seasoned carrots. Let cool to room temperature before using. Store in the refrigerator for up to 3 weeks.

Is there anything vegetarian that would be a good substitute for the fish sauce?
I've used 1/3 cup sugar, and normal red peppers. it turned out very tasty!
This makes quite a bit, but luckily it is very tasty. Adds some crunch and zing to everything, tofu bowls, sandwiches, eggs, the list is endless. For a 2-person household I would recommend halving it.

Where can I buy Scotch Bonnet seeds in the US? Anyone? Habaneros are almost, but not quite as good as SBs.

Krill are about 5000 times larger than yeast and (more importantly) have a significantly more complex physiology which includes a nervous system. This may be a concern to some vegetarians. There are vegan versions of fish sauce available in specialty shops and online that, in my experience, are surprisingly good.
Truly an eye- watering, breath stopping amount of vinegar.
Delicious. I made with a habanero and a large jalapeno because I did not find a serrano. I subbed Swerve Brown Sugar for the brown sugar as I am pre-diabetic. Delicious. I will make it again, and again and again.
Very tasty! I was out of cider vinegar, so I used Chinese black vinegar. It's perfect.
Doubled the recipe and cut down the sugar by half (personal preference). Didn't have the requisite hot peppers listed above so added a small bunch of yellow biquinho chile peppers from the garden and dried hot pepper from the pantry. HUGE hit.
Great flavor. Instead of the recommended peppers I used homemade pickled jalapeños (aka cowboy candy) and eliminated other sugar. A great way to use a too big bag of carrots
I speed this up by heating the vinegars and sugar in the microwave for 2 minutes and then pouring that over the carrots and other ingredients. This is truly delicious and so versatile!
Really delicious. I decided to cut the peppers into chunks so you don’t have to eat them unless you want to. Goes with everything!

I added some freshly grated ginger to these and they turned out perfect.
Carrots were too raw. So started again and blanched them first

Some fish sauces are made with krill. Technically still an animal, but if you drink beer or wine it’s basically on the same magnitude as saying yeast is an animal.
