Ingredients
- 1small sweet potato (about 8 ounces), peeled
- 2tablespoons extra-virgin olive oil
- 2teaspoons ground paprika
- Salt
- Ketchup or mustard (optional), for serving
Preparation
- Step 1
Heat air fryer to 400 degrees, if preheating is recommended for your air fryer.
- Step 2
Cut the sweet potato in half lengthwise then set each half on its flat surface and slice into ¼-inch planks. Cut the planks lengthwise into ¼-inch thick strips. In a large bowl, toss the sweet potato fries with the olive oil and paprika until well-coated; season generously with salt.
- Step 3
Transfer the sweet potatoes to the air fryer, piling them haphazardly to create height. (This will help with airflow, which helps the sweet potatoes cook evenly and crisp in spots. If you stack them too tightly, they will steam and soften.)
- Step 4
Cook for 5 minutes. Use tongs to give them a quick toss, then continue cooking until the sweet potato fries are tender on the inside and crisped and darkened in some spots toward the tips, 10 to 12 minutes, tossing again halfway through.
- Step 5
Transfer sweet potatoes to a serving dish and season with more salt if desired. Serve with ketchup or mustard.

I often make regular fries and sweet potato fries in my convection oven. No oil required, just use a nonstick cookie sheet. Bake at 425 for about 20 minutes. Crisp delicious and no extra fat from the oil. I usually sprinkle with spice’s before baking.
These get burnt at 400. Do at 350 for 12 minutes. Take out air fryer. Shake and toss with chopsticks to redistribute. Cook another 13 minutes at 350. Comes out perfect.
Can this be made in a convection oven?
I think so. Would suggest roasting/baking on a cooling rack on a cookie sheet. That's what I'll try tomorrow and report
Cooking them on parchment in an air fryer helps them crisp.
Keep in mind if using parchment paper, risk of ignition at 451° which is about broiler/air fryer setting in a convection toaster oven
But a convection oven is not necessarily an air fryer, so your reply doesn't help anybody.

Try adding sumac before cooking. 350 may be better than 400.
Yes! The air fryer is just a mini convection oven. I like using my oven because I don't have to worry about crowding food (an issue in air fryers)
About a comment below: I used a liner to cook a small amount of leftovers in my air fryer and it caught fire, completely burning up. Please BE CAREFUL!!

Combine this with Bittman’s oven recipe. I’ve found starting in the oven & finishing in the air fryer gets best results
I agree with other reviewers. Too thin and too hot. I cut them into larger wedges and cooked them at 350 for 12 minutes, tossed, and then cooked for another 10 minutes.
I serve my sweet potato fries with a dip made from maple syrup and hot pepper flakes.
Did anyone actually make these as written? *That* information would be helpful - speculation and seasoning recommendations? Not so much….
I love eating sweet potato fries with a dip made of orange marmalade and Dijon mustard. If you like sweet, more marmalade, if you like savory more mustard.
Air fryers are convection ovens. Perhaps smaller and maybe with better fans. Same mechanism of cook. These look awesome. Would love to know timing for larger portions in oven on convection. Thanks.

My new GE gas range has an air fryer component in the oven. Does this work in an oven air fryer vs a regular air fryer? Never used both.

I love air-fried sweet potato fries, but sprinkle a bit of extra fine salt on before cooking and eat them with a red pepper aoli: mix some mayonnaise with a bit of Peri Peri sauce, sriracha, Tabasco or whatever your favorite version of "hot sauce" is. It sets off the sweetness much better than cloying ketchup.
OK, explain how this can be faster than in a deep fryer. I'd expect it to be done in 8 minutes in a deep fryer, and the chances of problems are also less.
