Ingredients
Yield:6 servings
- 1cup yogurt
- 2tablespoons cider vinegar
- ¼teaspoon freshly ground black pepper
- ½teaspoon salt
- 4tablespoons chopped cilantro
- 4carrots (12 ounces), peeled and shredded (3½ cups)
- 2apples (12 ounces), left unpeeled but cored and cut into ¼-inch sticks (3½ cups)
- Crusty French bread (optional)
- Lettuce leaves (optional)
Preparation
- Step 1
Combine the yogurt, vinegar, pepper, salt and cilantro in a bowl. Add the carrots and apples, and mix well. Cover and refrigerate for a few hours to soften the carrots slightly.
- Step 2
Serve the salad with crusty bread or spoon it onto lettuce leaves.
