What a remarkable exit! As ÄIO and Gelatex wrap up their chapter with Accelerate Estonia, we’re reflecting on our impactful work in novel foods and beyond. ⭐ Here’s a look at our journey and key milestones: 🔹 We hosted Estonia’s very first novel food tasting at Latitude59, navigating a complex process in under a month 🔹 We explored four strategic directions for advancing the novel food sector 🔹 We assembled a core team to craft a roadmap for navigating the European Food Safety Authority (EFSA) novel food certification process 🔹 EASi ja KredExi ühendasutus' goal will now be finding a public sector owner in Estonia to support the novel food certification process. It is crucial for food innovators that future consumers are familiar with and love their products. Therefore, culinary showcases are extremely important for the novel food sector. At ÄIO, we're looking for a dynamic and motivated Engineer to join our team. This role offers an exciting opportunity to work at our pilot plant with bioprocesses, collaborate with a talented team, and contribute to our mission of making a more sustainable planet.

Recently, our Synbio Wizards Tommaso T. and Luísa Czamanski Nora were in Denmark taking part in some exciting events. 🚀 They attended the 3rd annual Nordic Digital Science and Innovation Day, organized by our beloved Benchling. There, they had the chance to network with professionals from leading companies like AstraZeneca and Novonesis, as well as with fellow startups who are adventuring into the scaling up and automation worlds. They gained valuable insights into how AI is revolutionizing the field of research, accelerating progress in the DBTL cycle. They also engaged in discussions with Carlos G. Acevedo-Rocha about his groundbreaking work in protein engineering and his recent collaboration with our co-founder's research group. 💡 During the trip, the duo visited the BioInnovation Institute, where they were immersed in the thriving science-based entrepreneurial ecosystem of Copenhagen. They connected with other startup teams to exchange experiences, challenges, and successes. A big shout out to the team at startup BioHalo, particularly Mariela Mezzina, Johann Liebeton, and Alberto De Maria, PhD for hosting them and providing a tour of the facilities. 🙏 There was also the opportunity to visit DTU Biosustain, with a very interesting conversation with Pablo Cruz-Morales, who is leading research efforts on the prospection and production of different natural products utilizing a variety of fungal hosts. 🔥 Last - but not least - they visited Unveil Bio, our new sequencing technology provider, relying on Oxford Nanopore Technologies to perform whole-plasmid sequencing. Huge thanks to Scott Quainoo, co-founder and CEO of the company, for giving them a tour around Symbion, where Unveil Bio is located. 📈 Copenhagen proved to be a vibrant hub of scientific innovation, leaving everyone at ÄIO feeling inspired and motivated by the learnings and experiences Luisa and Tommy brought back from their trip. ✨
