    Shogun Maitake is a Canadian company partnering with University of Windsor researchers to investigate if the black maitake mushroom could help treat cancer or ease negative reactions to chemotherapy. According to Siyiram Pandey, the team’s research lead and a chemistry professor at the University of Windsor, the outlook is really promising: “It is not only killing a specific cancer, it seems to be active on many cancers.” The team is running tests with maitake extract, a dark, odorless liquid provided by Shogun Maitake, which sells maitake mushrooms. In early trials, the extract killed 70% of cancer cells, Pandey said. That’s 10% more effective than taxol and cisplatin, two of the most popular chemotherapy drugs. And it has fewer extreme side effects, he said. The team recently received a two-year, $60,000 grant from Mitacs, a Canadian nonprofit research organization, to investigate the mushroom’s effect on cancer cells and chemotherapy. If the lab’s findings are confirmed, cancer patients could one day take an oral maitake supplement to fight the disease.     The aim of composting is to break down the nutrients in the raw materials (wheat straw, horse and chicken manure), to make the decomposed materials available for the button mushroom and to prevent pathogens and pests from taking hold. To achieve this, the straw is first moistened with a sufficient amount of water, because a sufficient amount of water is needed: - to allow certain microbial groups (bacteria, microscopic fungi) to multiply in the manure, - to digest the nutrients and - to bind free ammonia. One group of microbes uses and breaks down easily absorbable carbohydrates from the raw materials of the compost. Other microbial groups hydrolyse straw cellulose into simpler carbohydrates, releasing heat and carbon dioxide. The organisms involved in breaking down the raw materials and making compost include:  - ammonifying bacteria: under aerobic or anaerobic conditions, they release ammonia as a result of the breakdown of nitrogen-containing organic compounds. The amount of ammonia produced during ammonification depends on the C:N ratio of the decomposing organic matter mixture. - nitrifying bacteria: most of the ammonia is oxidised to nitrate via nitrite (the energy gained in the process covers the assimilation of carbon dioxide). The nitrate produced during nitrification is of great importance, as it is assimilated to a significant extent by the mushroom. -denitrifying bacteria: the nitrate present in higher amounts is reduced to nitrite, then further reduced, and finally elemental nitrogen is released, so that denitrification results in a loss of nitrogen. #compost #mushrooms #biofungi #technology
