They come in three forms: alpha-, beta-, and gamma-cyclodextrin, composed of 6/7/8 units, respectively (or rather rarely even larger - industrially not applied yet), each with a different cavity size. The cavity size of cyclodextrins is a critical factor that determines its applications and effectiveness. The cavity size of cyclodextrins affects the solubility and stability of the molecules it encapsulates. For example, small hydrophobic molecules such as flavor and fragrance components can be easily encapsulated by alpha-cyclodextrin, while larger hydrophobic molecules such as drugs may require the larger cavity size of gamma-cyclodextrin. By encapsulating hydrophobic molecules, cyclodextrins increase their solubility and stability, making them useful in various industries such as food, cosmetics, and pharmaceuticals. The cavity size of cyclodextrins also affects their ability to form inclusion complexes. Inclusion complexes are formed when the hydrophobic portion of a molecule is encapsulated by the hydrophobic interior of the cyclodextrin cavity. The stability of these complexes is dependent on the size of the cavity and the size of the molecule being encapsulated.
