Over the past month, I’ve been doing some behind-the-scenes work to clean-up and organize the recipes and blog posts here on Inspired by Charm. One thing I noticed was that I didn’t have a good potato salad recipe. Why? Well, to be quite honest, I really don’t like potato salad. Well, that was until I made this Bacon and Blue Cheese Potato Salad.

- My problem with most potato salads is that they are really heavy and can often be pretty bland. That’s not the case with this recipe. Thanks to a lighter dressing, chunks of blue cheese and bacon, and a sprinkle of fresh green onions, this is a potato salad recipe I can get behind.
- This Bacon and Blue Cheese Potato Salad is so easy to make. I also love that you don’t have to peel the potatoes. Not only does it save time, but I think it adds such a nice color, texture, and flavor.

Ingredients
When it comes down to it, this salad is pretty simple made with just four ingredients and dressing.
- bacon – Go with a really good thick-cut bacon. I tend to reach for applewood smoked. (Learn my secret for cooking perfect bacon that results in less of a greasy mess!)
- new red potatoes – These potatoes are perfect for this recipe.
- green onions – A green onion adds great flavor and color.
- blue cheese – I’m a big blue cheese fan. This really makes this recipe shine!
- 0live oil, white vinegar, sugar, salt and pepper – A simple and light dressing finishes off this potato salad.
How to Make
- Begin by cooking your bacon.
- Once your bacon is cooked and cooled, crumble and set aside. For your convenience, there is a full ingredient list and detailed instructions in the printable recipe card below.
- While your bacon cooks, bring a large pot of water to a boil. Once boiling, add the potatoes and cook until tender. Depending on the size of your potatoes, this will take 15-20 minutes. Drain, cool, and cut your potatoes into 1-inch chunks.
- To a large bowl add the potatoes, bacon, green onion, and blue cheese.

- In a small bowl, whisk together the olive oil, white vinegar, sugar, black pepper, and salt. Drizzle this on top of your potato mixture.
- Toss with a large spoon or spatula to combine.
- Chill for at least 1-2 hours before serving. And for those that are wondering … yes, this can be made 24-hours in advance and chilled in an airtight container.
As I mentioned above, this recipe has such great flavor and doesn’t feel overly heavy. If you’re looking to try something new, I think you’re going to love this as much as I do.

Ingredients
- 5 slices bacon
- 2 pounds unpeeled new red potatoes
- 1/4 cup olive oil
- 3 tablespoons white vinegar
- 2 teaspoons sugar
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup chopped green onions about 5-6 green onions
- 1/2 cup crumbled blue cheese
Instructions

So simple, but so flavorful. I find most potato salads to be way too heavy. This is much lighter.

I would love this recipe but so many people get turned off with blue cheese. Is there an alternative cheese you could suggest?
You could try goat or feta, but I love the tang that the blue cheese added to this recipe.
