Il cibo diventa noi. Questa semplice considerazione dovrebbe bastare ad appassionarcene smisuratamente. Invece di ciò che ci nutre non sappiamo quasi nulla: non sappiamo dove e come viene coltivato, allevato e trasformato. Una trasformazione culturale che ha cercato di spostare il valore del cibo dalla produzione alla trasformazione industriale, alla distribuzione e alla vendita. Ed è un processo che implica distanza tra cittadini e produttori, quindi tra città e campagna, implica spreco, sfruttamento e anche morte. Cambiare paradigma a partire dal cibo e adottarne uno “bio-logico”, cioé imperniato sulla vita, sulla biodiversità, sull’equità, rappresenta per noi il passaggio necessario per guardare il mondo con occhi nuovi e percepirci dentro la natura… Perché: “We are nature”, come recita il claim di Terra Madre Salone del Gusto 2024. This journey explores how justice ensures equitable resource management, protects Indigenous rights and supports small-scale farmers. It's about addressing inequalities and empowering communities to have access to healthy, sustainable food. Indigenous peoples, guardians of our planet's biodiversity, remind us that protecting their rights is crucial for environmental and social justice. We also must confront the disparity where the wealthiest 1% emit more CO2 than the poorest 3 billion people combined. Together, we can build a future where diversity and community lead the way to a more just food system!
