SHREWSBURY, MA — The owners of the Eggholic restaurant in Shrewsbury — the first location of the Indian chain in New England — don't want the name to fool you.

The newly opened restaurant offers a world of Indian street food far beyond eggs, and beyond the Indian classics like chicken tikka and naan. Eggholic, the owners say, is unlike any Indian restaurant you'll find locally.

Owners Kush Patel and his father-in-law, Bharat Patel, decided to bring Eggholic to Shrewsbury after dining at a location in Columbus, Ohio. Kush Patel, who lives in Ohio, said his family would take the hour drive to Columbus because the food was that good, and more in line with what you'd find in India.

The restaurant opened in January in the newly renovated Marketplace Shrewsbury plaza near the intersection of Route 9 and Maple Street. Kush Patel said they opened in Shrewsbury because of the high local Indian population, and wanted to offer a restaurant with fresh, made-to-order food "that feels like home."

Eggholic was founded in Chicago in 2018 by Bhagyesh and Lay Patel, who brought egg dishes popular in street food in the state of Gujarat to North America. The chain now has 20 locations across the U.S. and Canada, with nine more on the way — including a second Massachusetts restaurant in Burlington.

Inside the Shrewsbury location, you'll find decorations from Bollywood movies, and in the kitchen you'll find cooks using traditional Indian cookware like tava pans. And while eggss are a big part of the menu, Eggholic offers a wide range of dishes, from halal chicken, to wraps and grilled sandwiches, a huge number of vegetarian dishes and an eclectic kids menu (a chocolate and cheese sandwich, for example). Although eggs are a part of Indian cuisine, most Hindus do not consider them vegetarian, and they have been banned in parts of the country.

For those strictly vegetarian diners, Patel wants to emphasize that they have plenty of options, including paneer, chickpea-based chhole and bhel, a puffed rice snack typically served along beaches near Mumbai.

"It’s not just eggs" Patel reminds. "Our taste is from India. Everything we make in this restaurant is to make people feel they're eating in India."
