ASHBURN, VA — Several restaurants around Ashburn, Dulles, and Sterling were cited with violations during recent inspections from the Loudoun County Health Department. The most recently published inspections occurred between Feb. 2 and Feb. 8.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

    • Date inspected: Feb. 2
    • Total violations: 6
      • Observed employee drink store near single use containers.
      • Observed raw chicken and beef stored next to each other in walk in. In prep cooler raw chicken and shrimp stored in same container.
      • Observed battered chicken 43F, 50F stored at an improper cold holding temperature.
      • Observed shrimp improperly thaw in a bucket of water.
      • Observed a variety of foods being store on the floor of the walk in cooler and walk in freezer.
      • Observed ice scoop with handle touching ice. Utensils used for rice store in water 117F.

    • Date inspected: Feb. 2
    • Total violations: 4
      • EHS observed soil residue accumulating on the interior bin of the ice machine.
      • Cooked chicken that was put into the reach-in cooler the previous night to thaw, dated 2/1 (45F) and Tuna salad dated 1/30 (52F) were found at improper temperature for cold holding.
      • Trays of yogurt were found stored directly on the floor of the walk-in cooler.
      • EHS observed a food employee at the front counter with a loose ponytail, hair unrestrained.

    • Date inspected: Feb. 2
    • Total violations: 4
      • The facility does not have a vomit/diarrhea policy/procedure in place.
      • Raw chicken was found stored above/over raw shrimp in the walk-in cooler.
      • 2 spray bottles with unknown liquids were found below the hand washing station.
      • The wall behind the handwashing sink between the 3 basin sink and the line is missing a large portion, exposing pipes. Other portions of wall are missing above this area due to a recent leak.

    • Total violations: 4
      • The Person in Charge has not ensured that staff are trained to select and use the correct test kit for each sanitizer used in the facility. Staff are not trained to test sanitizers on a regular basis.
      • When asked, the Person in Charge was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy - no documentation available for the bartender.
      • Queso at 131°F hot holding at improper temperatures.
      • The quat sanitizer is labeled for use at 200-400 ppm and was tested at above 500 ppm.

      • EHS observed evidence of smoking in the kitchen. Smoking paraphernalia observed on the prep counter adjacent from the cook line (lighters, glass apparatus etc.)

    • Total violations: 5
      • Signed copies of food employee reporting agreement (form 1B) not provided during inspection.
      • Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
      • Hand washing facility in men's restroom observed with wash hands sign.
      • Handwashing facility in the kitchen observed with soap.
      • Date marking not provided to several containers of cooked pork in the walk in refrigerator. As per the Person in Charge (PIC) said food was prepared a day prior and will be held for two days.

    • Date inspected: Feb. 2
    • Total violations: 1
      • Observed a large stacks of cups to have a designated space in front of the front line hand washing sink. Water in hand sink is hot and appears to be utilized. Please ensure that it is accessible at all times.
  • Primrose School @Moorefield Station, 43345 Bissell Terrace Ashburn, VA 20148
    • Date inspected: Feb. 2
    • Total violations: 5
      • The Person in Charge (PIC) has not ensured that staff are trained in food safety as it related to their duties, the worker stated that they clean the food thermometer probe with soap and water and do not use sanitizer and was not able to correctly describe how they monitor the temperature of the high-temp dish machine (the worker pointed at the external temperature gauges when asked).
      • When asked, the Person in Charge and food service worker were not able to locate a minimum of two food thermometers - one thermometer observed.
      • The food service worker was observed not wearing a hair restraint
      • The can opener blade is not sharp enough to minimize the creation of metal fragments - metal fragments observed on the can opener. Replace the can opener blade and keep the blade sharp by regular replacement or sharpening. Corrected on site - a backup can opener will be used prior to replacement of the blade.
      • The chlorine test kits in the facility expired on 04/01/2014.

      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • Few boxes of cereal and crackers observed stored on floor.
      • Sanitizer test strips not provided to measure the level of sanitizer for dishwasher and three compartment sink.

      • Observed employee washing dishes failing to wash their hands before removing cleaned and sanitized dishes from the dish machine.
      • Observed soda nozzles in need of cleaning. Soda nozzles observed with brown/ black residue.
      • Observed white rice hot holding at improper temperature in the hot holding line. White rice was observed at 122F.

      • Several temperature control for safety (TCS) food such as cheese, cut leafy greens, raw shrimp and raw steak registered between 44°F to 48°F in low boy refrigeration units in front of the grill in kitchen/food prep area. Said units observed open.

      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • Date marking not provided to cooked food in that several trays and containers of as fried chicken, Italian wedding soup and meat sauce that was prepared a day prior and will be cold held for 3 days observed not dated.
      • Containers with cooked chicken wings observed stored on floor in the walk in refrigerator. Bottles of drinks and can goods observed stored on floor in rear food storage area.

      • Several spray bottles within the kitchen were found without identifying information.
      • EHS observed no date marking within the facility.
      • Marinara and meatballs found hot holding at improper temperature (113F, 120F).
      • Raw shell egg cartons were observed stored over dough and ready to eat foods.
      • There are no hand drying provisions at either of the two hand sinks in the kitchen.

      • The faucet for cold running water in handwashing sink located next to the prep sink in kitchen observed broken in that it does not close.

      • Observed rice 91F cooling on counter covered the person in charge the said rice had been there since about 11:30am EHS found at about 2:15pm.
      • Observed feta cheese at to go line at 49F.
      • Observed no hot water in hand sinks 56F and 3 compartment sink.

      • Observed dish with a plate temperature of 155F.
      • Observed microwaves not clean to sight and touch.

      • A tray of raw shell eggs was observed stored directly on top of sliced cheeses and sausage patties in the reach in prep cooler on the line.
      • Observed a dark residue build up on the plastic portion of the ice dispenser of the soda machine.
  • Potbelly Sandwich Shop (TERMINAL B), 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: Feb. 8
    • Total violations: 5
      • EHS observed zero sanitizer hooked up to the automatic feed at the three compartment sink. Observed evidence of ware washing-wares not sanitized after cleaning.
      • Bags of soup (2) and a bag of mac and cheese sitting in pot of water from reheating however the water was off and said TCS (time temperature control for safety) foods were hot holding at improper temperatures (114F). Sausage patties also hot holding at improper temperatures in the steam table (120F).
      • Several ready to eat (RTE) TCS foods not date marked after the commercial packaging was opened. Mortadella, hummus, turkey, and ham observed open. Said TCS foods observed in the walk in cooler and in the stand up cooler.
      • The insect control device is hanging incorrectly (one side is detached from the wall and is hanging directly over the pot used to reheat soups.
      • Back prep kitchen observed very dark. EHS measured the light intensity it is 5FC throughout the prep area.
  • Kadbanoo Catering(Gordon’s Kitchen LLC), 506 Shaw Rd #329 Sterling, VA 20166
    • Date inspected: Feb. 8
    • Total violations: 1
      • Four jars of jam (two jars of orange peel cooked with rose water and sugar and two jars of sour cherry with sugar) observed held in the reach in refrigerator. As per the person in charge, she cooks them and cold hold in refrigerator for few months.

    • Date inspected: Feb. 8
    • Total violations: 4
      • Date marking not provided to prepared temperature control for safety (TCS) food such as cooked chicken and cooked indoor in refrigerator. As per the PIC said food were prepared two days prior and being held in walk in refrigerator.
      • Onion vegetable gravy in the low boy refrigerator in kitchen observed held for more than 7 days.
      • Improper methods used to thaw raw shrimp.
      • Unused equipment such as dishwasher, oven and reach in refrigerator shall be removed from the facility as it can become harborage area for pest.
