Manassas Restaurant Inspections: Ice Machine Mildew, 17 Violations

MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between June 17 and 26.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Unwrapped or uncovered food (broccoli) in the Mr. Winter walk-in cooler.
  • The following non-food contact surfaces used for cooking or storing food were observed with visible accumulations of soil and debris, which may contaminate food and attract insects and rodents: the side of the stove, the Centaur two-door reach-in freezer, and the inside hood of the Everest two-door reach-in cooler and prep unit.
  • Improper methods used to cool the cooked breaded chicken. Observed the cooked chicken that, according to the person in charge, had been cooked just 20 minutes prior, at a temperature of 96°F cooling with plastic wrap covering it. The person in charge removed the plastic covering from the container of breaded chicken.
  • The Person in Charge could not provide a temperature measuring device for the Centaur two-door reach-in freezer and the Frigidaire chest freezer.
  • Food stored on the floor in the Mr. Winter walk-in cooler (raw onions, raw carrots, and bamboo shoots) and Mr. Winter walk-in freezer (raw beef). The person in charge removed all of the food off the floor.
  • Observed cornstarch stored under the three-compartment sink. The person in charge removed the cornstarch from under the three-compartment sink and stored it in an appropriate location.
  • There is no chemical sanitizing test kit at the three-compartment sink present to ensure the chemical sanitizing solution used is at the proper concentration.
  • There is no chemical sanitizing test kit for the chemical dishwashing machine present to ensure the chemical sanitizing solution used is at the proper concentration.
