WOODBRIDGE, VA — Some restaurants in the Woodbridge area recorded violations during recent health department inspections between June 1 and 18.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • There was no soap available at the handwashing sink. Container appears to be filled with sanitizer that does not foam.
  • The following refrigeration units in the mobile food unit were not holding temperatures of 41 degrees F and below: True 2 door upright refrigerator.
  • There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (quaternary ammonium).
  • The faucet at the 3 compartment sink has been replaced and the new one extends to reach all three compartments, but the handles are missing now and wrenches are being used as handles.

  • The walk-in refrigerator has been repaired and is holding a temperature of 41 degrees F or below as required (37 degrees F). Remember to replace the gaskets around the door to help the door close completely and the refrigeration unit function more efficiently.
  • The 4 door prep reach-in refrigerator along the cookline had been serviced (coils cleaned) and was holding a temperature of 41 degrees F. Beef on top was at 41 degrees F. The door that was hanging at an angle had been repaired as well. The Person In Charge (PIC) indicated that the repairman was returning to add coolant to this unit to bring the temperature down below the required 41 degrees F.
  • The 3 compartment sink had been modified so that there is a 14 inch faucet at the sink that is capable of dispensing water into the first and second basins. Unfortunately, it could not reach the 3rd basin. Advised the PIC to set up the sink with soapy water in the first basin, clean water in second basin and use a clean bucket to transfer clean water into the third basin and add the appropriate amount of chlorine bleach for sanitizing.
  • The single basin prep sink, located at a central location in the kitchen, that has been designated as the handwashing sink is fully stocked with dispensed soap, paper towels and hot water at 111 degrees F. There is also signage designating it as the handwashing sink only.
